Proteins perform a range of complex functions in nature. Their composition and structure determine their physical characteristics which are of importance for their biological properties. A protein's amino acid composition and exposure of amino acid side chains influence its interaction with water. This kit demonstrates the important effects on proteins of physical parameters such as temperature, pH, salt concentration and dielectric constants, and illustrates how these effects are used for the isolation and purification of proteins

Experiments which can be performed:

1. Isoletric precipitation of casein
2. Separation of albumin and gelatin by ammonium sulfate fractionation
3. Effects of acetone on solution of albumin and gelatin
4. Heat denaturation of albumin
5. Precipitation of protein by lead acetate
